Can I set a stop loss based on price and a target based on percentage? For example, if I sell an option with a 0.07 delta (far OTM), I want to exit the trade if the spot price moves 40 points closer to my short strike.

You can do this via basket trigger order, just select the strike you want to place SL on and select nifty 50 (or any scrip) and set price 40 points above as trigger. PFA screenshot for reference.
